Biltong is a delicious, high-protein snack that's naturally preserved — but that doesn’t mean it lasts forever once opened. Whether you enjoy it slowly or stock up in bulk, knowing how to store biltong properly is the key to keeping its flavour, texture, and nutritional value intact.

1. Store in a Cool, Dry Place (Before Opening)
Before opening, keep your biltong in a cool, dry pantry or cupboard away from direct sunlight. Heat and moisture are the enemies of freshness.
Tip: If you’ve bought several 75g bags of Wild Bites biltong, store unopened ones in a sealed container or a pantry box to regulate temperature and reduce humidity exposure.
2. Once Opened, Use an Airtight Container
Once the packet is opened, biltong is exposed to oxygen and moisture. To preserve biltong freshness, transfer it to an airtight container to prevent it from drying out or absorbing unwanted odours from other foods.

3. Refrigerate After Opening (Especially in Warm Climates)
In hot or humid climates like much of Australia, it’s a smart move to refrigerate biltong once opened. This helps prevent mould growth and extends shelf life.
How to refrigerate biltong properly:

4. Avoid Freezing — Unless You Really Have To
While freezing biltong can extend its life, it can alter its texture once thawed. Only freeze biltong if you have no other storage option and plan to keep it for over a month.
If freezing:

Thaw slowly in the fridge before opening.
Bonus Tip: Don’t Store Biltong With Bread or Moist Foods
Never store biltong in the same container or bag as bread or other moist foods. Moisture promotes mould, and biltong naturally contains very little of it — that’s part of its preservative power.
